2 Large yellow onions, roughly chopped⅓ cup
80 ml Vegetable oil, plus 2 tablespoons
395 g Diced tomato
170 grams Tomato puree
1 Scotch Bonet Pepper
2 Teaspoon Curry Powder
1 Teaspoon Garlic Powder
1 Teaspoon Ground Ginger
½ Teaspoon Mixed Dried Herbs
3 Chicken Stock Cubes
2 ½ Cups Basmati Rice
1 ½ Cups Water
1 Cup Frozen Mixed Vegetable

Instructions

Chuck the onions and 2 tablespoons of oil into a blender, and give it a good pulse until it's nice and smooth. Transfer that to a medium bowl.
Next, take your diced tomatoes, tomato paste, and a fiery habanero pepper, and blitz them in the blender until smooth. Move that mixture to a separate medium bowl.Now, heat up the remaining ⅓ cup (80 ml) of oil in a large, heavy-bottomed pot over medium heat.
Once the oil's shimmering and ready to go, add the onion puree. Cook it until the water evaporates and it starts to brown—about 10 minutes.
Stir in the tomato puree and toss in the curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Let that cook for 20-30 minutes, giving it an occasional stir until the stew reduces by half and turns a deep, rich red.
Throw in the rice, mixed vegetables, and water. Bring it all to a boil, then turn the heat down low. Cover the pot with foil and a lid, and let it simmer for another 30 minutes. By then, the rice should be perfectly cooked, and the liquid completely absorbed. Absolutely stunning!
